I used to bake a ton- for myself, for others, for anyone really. I wasn’t partial to one type of baked good over another. Obviously, I enjoyed getting to taste the end product, but there’s something more to baking than just eating. It’s very relaxing for me. I left school yesterday with a hankering for baking! I was craving something a little sweet with cinnamon and raisins. I picked up a few ingredients at Whole Foods and got excited to bake after I went to a wod (workout of the day).
- 1/2 cup almond meal
- 1/2 cup unsweetened shredded coconut
- 1 egg
- 1 carrot shredded (I used a vegetable peeler)
- 1 tsp vanilla
- 1 tsp coconut oil
- 1/2 tsp cinnamon- plus a few extra shakes 🙂
- few shakes of nutmeg
Mix everything together by hand. Form into small patty/cookie shapes. Remember, they won’t rise or expand so make them the size you want to begin with. Bake at 375 for 15-20 minutes.
I thought they turned out delicious! They weren’t super sweet, but definitely satiated the baked good craving. I loved the texture of them, too. It was a dense but still chewy- a cross between cake and cookie. More variations on this recipe coming soon.

Pull-ups- thin yellow band
My time was 8:53. It was a little slower than I expected; however, it was for good reason. I did all ‘real’ pushups!! That was my goal going into it and I maintained it. I definitely had to take a few breaks to shake my arms out, but I felt accomplished afterwards. Next up- ditch the last band on the pullups!
